3 Tbsp white whole wheat flour
2 Tbsp cocoa powder
1 tsp. Starbucks VIA instant coffee (I used the Christmas Blend)
½ tsp. baking powder
1 Tbsp raw sugar
¼ tsp. nutmeg
3 Tbsp dairy-free coconut milk eggnog (or regular eggnog)
2 tsp. unsweetened applesauce
¼ tsp. vanilla extract
In a small bowl, whisk together dry ingredients until completely combined then add in eggnog, applesauce and vanilla extract. Whisk together until all clumps are gone.
Spoon mixture into microwavable safe coffee mug and microwave on high for 1 minute and 15 seconds.
Allow cake to cool, top with whipped cream or chocolate syrup and enjoy!
